Anzac biscuits...
for ANZAC DAY!
The origin of Anzac biscuits comes from World War I, when the ANZAC (Australian and New Zealand Army Corps) soldiers landed at Gallipoli on 25 April 1915. Apparently the biscuits were sent to soldiers in the war by their families.
Edmonds Cookbook’s ANZAC Biscuit Recipe:
100 g butter
1 Tablespoon golden syrup
½ cup sugar
¾ cup of coconut
¾ cup rolled oats
¾ flour
1 teaspoon baking soda
1 Tablespoon hot water
Melt butter and syrup together in a pot. Cool.
Mix sugar, coconut, oats and flour…and stir into pot
Dissolve soda in water and add in
Place rounded teaspoonful’s on greased oven tray
Bake in moderate oven for 15 minutes
